GREEN CHILE SAUCE
(MAKES ABOUT 5 CUPS)
• 3 cups New Mexico Green Chile, roasted, peeled, seeded and chopped
• 1 TBS olive oil
• 1 small white onion, diced
• 2 TBS minced garlic
• 2 tsp dried oregano
• 2 cups chicken
or vegetable stock
• Salt and pepper to taste
In a medium saucepan, sauté onions and garlic in olive oil over medium high heat, stirring frequently until onions are slightly translucent.
Add oregano and sauté for another minute.
Add stock and bring to a simmer. Simmer for 15 minutes. Season to taste with salt and pepper.
Remove 1½ cups of the sauce and purée in a blender. Return the purée to the pan and simmer for another 5 minutes.
